I have a Snow-Flake Eel that has become to big for the tank it is in.
 
It was 6 inches when I got it and it is now 18"
 
How is the best way to catch it?

I used a fish hook with the barbs cut off and a big huck of silver side. He swolled, I fished, nature took its corse, walla everyones happy.
I have flying monkeys and I'm not afraid to use them.

180 gallon money pit that I love.....

Try not to squeal like a little girl when catching an eel.  Believe me, it doesn't help.
 
I have had some success using an XX-large net.  I placed bait (freeze dried shrimp) in the net and waited for the eel to go into the net.  When it was "mostly" in the net, I twisted and lifted and out it came.
 
The squealing came as I moved from the tank to the bucket and the eel came out of the net!  It evetually made it into the bucket, but not before I was completely embarassed!
 
Fun times ....

how long did it took for the to eel grow those 12 inches?

I did grab him once and squealed like a little girl - knocked over corals - splashed water everywhere and hit my hand on the top of the tank when I let him go and pulled out faster than if I had been electrocuted. 

It took it about a year to grow that big.
