So after looking for around 5lbs of live rock for my setup, Todd told me about his experience with adding 6lbs of LR to his tank, he said that the die off nearly crashed his tank, so I thought about my options, and was wondering, would it be easier on my tank to add cleaned dead fiji rock, or just go 2lbs of live rock in my tank every few weeks?

You can always cure live rock in a bucket considering how much you are looking for.

Stick a powerhead in the bucket and wait.  This way you are 100% sure on it's state right before you put it in.

Even cleaned dead live rock (wow that's a contradiction) will give off some ammonia / nitrite / nitrates.

How long would I want to cure live rock for by the way?

Don't know you would have to test you water for ammonia, nitrite, nitrate before you would know when it's cured.

Depends on where you get the live rock as well. If you buy it from another hobbyist and it goes from their tank to your tank pretty quickly, you shouldn't experience noticeable die-off. If you order it online or from a LFS and it's been out of water for a while, then you'll need to be cautious.

sterling18 is right that it would be a good idea to just throw it in a bucket with a powerhead for a while just to be safe.
