So how do I get that old one out of the way so I can put on a new one?

Clamp the whole thing in a mill and cut it off.  Any machine shop in town should be able to do it for you.

I don't have any experience with that adhesive, but could you pop it off with a chisel and hammer?

Got a photo of it? how is it wired? be very careful not to damage surrounding LEDs or wiring connections.

After doing more research it looks like everyone just uses a hammer and screwdriver to get it off. I have enough space between the LEDs that I think I can do it without damaging the others. I also have enough space that I could put one next to it like Aquaristnewbie suggested if I can't get it off.

Laird,
I just removed 24 leds from a heat sink using a hammer and a very thin small flat head, I just hit the plaster and they came off easily.
