I've been out of town a lot this year for work and have to start by saying that my APEX been a great tool for keeping an eye on my tank, along with a great fellow reefer to ck up on things. (Thanks Tyler!)

So, my current trip has brought me out to the great state of Ohio. On this trip, I've had my wife let me know when she was going to change the filter sock so I could turn off the skimmer remotely and turn out back on about 24 hours later, sure to the fact that a new sock makes the skimmer go crazy.

I can tell when I've forgot to turn the skimmer back on because my pH will be lower than normal. As soon as the skimmer is back on, the pH will creep back up to the 8.1 range.

Why? My guess is the skimmer some how oxygenates the water in the sump?

Just one of those things that I would like to understand, so I will suit back and let the experts chime in.

I know on my tank the ph 8.2 when skimmer is running. And it will drop to 7.8 when off for a day

You are spot on. The skimmer helps dissolve oxygen in the water much like an airstone in a FW aquarium. CO2 is acidic and as it builds up in the water it lowers the pH, a skimmer helps add oxygen to the water bringing up the pH.
 Other things that can affect the pH are surface agitation (adequate surface agitation will promote good gas exchange thus raising the pH). Temperature also plays a large role as cooler water holds much more oxygen than warmer water does (another reason to run our tanks at 76 or so instead of 80 or more).
