I have a cleaner shrimp that has shed its skin several times in the last few
months. Is that a good or bad sign? I didn't realize it would be so frequent.
Of course, I also have a fire shrimp so I can't be positive that they are all the
cleaner. I think they have both molted.

I was told that they only have so many moltings before they die. Can anyone confirm this info? You may want to try and feed it less if you can. I know my cleaner shrimp will take food from my hand and will beg for food if I place my hand in the tank. It has also molted 3 times in the last 2 months but it is still small. I'm trying to put him on a diet but he stills food from my corals and anemones.

whoever told you that is crazy.  They just start molting less the older they get.  When they are very young, they will molt several times within a few weeks, maybe months.  As they mature, they may molt only 1 or 2 times in several months.  It is a perfectly natural occurence in arthropods
